Fragrant rice pudding with lemon and vine fruits

Using lemon and fruits lifts the humble rice pudding into another dimension. Rice Dream gives a lovely creamy yet light texture and due to its natural sweetness there is no need to add sugar to the rice.


75g pudding rice
Zest of an unwaxed lemon
75g dried fruit
600ml Vanilla, Calcium or Organic Rice Dream
2 bay leaves
25g golden caster sugar


  1. Preheat the oven to 150°C/130°C fan/gas mark 2.
  2. Place the pudding rice into an oven-proof dish along with the sugar, lemon zest and dried fruits.
  3. Warm the Rice Dream with the bay leaves then pour over the rice.
  4. Cover the dish with foil then bake for an hour.
  5. Pre-heat the grill to high.
  6. Remove the foil from the pudding then sprinkle with the sugar.
  7. Grill until caramelized.
  8. Serve the rice on its own or with some stewed fruit or even good old strawberry jam.

Instead of using traditional pudding rice, why not try jasmine rice or even basmati. Or for something really different, replace the rice with vermicelli pasta and add 5-6 split cardamom pods.
