Creamy sausage and mushroom bake

A firm family favourite, quick and easy to assemble and a perfect everyday supper dish for the children.


2 tbsps cornflour
150ml vegetable stock
250ml Rice Dream
1 tbsp tamari
1 tbsp olive oil
1 medium onion, finely chopped
1 celery stalk, finely chopped
1 red pepper, finely chopped
200g button mushrooms, halved
4 cloves garlic, crushed
1/2 teaspoon smoked paprika
Pinch of cayenne pepper Freshly ground black pepper
8 vegetarian sausages, cooked and sliced
1 tbsp parsley, chopped


  1. Mix the cornflour with a little water to make a paste.
  2. Pour the vegetable stock and Rice Dream into a pan and add the cornflour.
  3. Gradually heat, stirring constantly until it begins to thicken.
  4. Simmer for 2-3 minutes.
  5. Add the tamari.
  6. Heat the oil in a frying pan and sauté the onion for 2-3 minutes.
  7. Add the celery and pepper and cook for a further 5 minutes.
  8. Add the mushrooms, spices and garlic and stir for another 2 minutes.
  9. Stir in the sauce and sliced sausages and heat through.
  10. Season to taste and sprinkle over the parsley to serve.
