Classic bechamel sauce

This white sauce is the base for many savoury dishes including lasagne. Using Rice Dream instead of milk makes no difference to the finished, creamy result.


500ml Calcium or Organic Rice Dream
2 bay leaves
50ml olive oil
50g plain flour
1/2 tsp nutmeg
Sea salt and freshly ground black pepper


  1. Pour the Rice Dream into a pan, add the bay leaves, then warm on the hob.
  2. Place the oil in a large saucepan and, when hot, add the flour.
  3. Mix to a paste. Sizzle gently for a couple of minutes. You need to do this to cook out the floury taste.
  4. Add a quarter of the warmed Rice Dream using a whisk to get rid of any lumps.
  5. With a wooden spoon, go around the edges of the pan to catch any flour that may be trapped.
  6. Gradually add the rest of the Rice Dream, whisking and stirring all the while.
  7. Bring the sauce up to the boil and bubble gently for about 5 minutes.
  8. Add the nutmeg and season generously.
  9. Use in your favourite dishes like lasagne, moussaka or stuffed marrow.
