Classic apple pie

This delicious apple cake is suitable for vegetarians and is great served warm with crème anglaise or custard.


200g plain flour
50g ground almonds
3 tsps baking powder
200ml Vanilla Rice Dream
6 tblsp of clear honey
1 egg 5 tblsp vegetable oil
5 apples
Rind of 1 orange
Rind of 1 lemon


  1. Preheat the oven to 180C fan/200C/Gas Mark 5.
  2. Put the flour, almonds and baking powder in a bowl, mix in the eggs along with the Rice Dream, whisking until smooth.
  3. Then stir in the honey and the oil.
  4. Grease and line a 22inc cake tin with greaseproof paper to stop the cake from sticking.
  5. Peel the apples and slice thinly, placing them directly in to the tin.
  6. Pour the cake mixture over the apples and bake for 30 minutes until golden brown.
  7. Leave to cool before turning out of the cake tin and serving.
