Tangy kale and apple soup

Make the most of winter greens and enjoy this fabulous sweet tangy soup. The orange juice gives a subtle sweetness to the soup while adding Rice Dream creates a smooth creamy texture to the soup.

Ingredients

2 oranges, deseeded and coarsely chopped
2 tsps apple cider vinegar, or to taste
1 tbsp tamari
1 tsp honey
300ml Rice Dream Original or Organic
60g pine nuts
1 tbsp olive oil or coconut butter
1 shallot chopped
2 garlic cloves crushed
200g bag of chopped kale leaves
1 apple, chopped
Pinch of dried chilli flakes
2 tbsps toasted pumpkin or sunflower seeds to sprinkle on the top

Method

  1. Place the orange, cider vinegar, tamari, honey, Rice Dream and pine nuts in a blender and process until completely smooth.
  2. Heat the coconut butter in a large saucepan and sauté the onion and garlic for 1-2 minutes until soft.
  3. Add the kale, apple and Rice Dream mixture and simmer gently for 5 minutes until the kale has wilted.
  4. Puree the soup with a hand blender or place in a food processor.
  5. Warm through and season to taste.
  6. Spoon into bowls and garnish with toasted seeds if wished.
