Peach batter breakfast pudding

A wonderful breakfast or brunch dish and the perfect way to make the most of the summer peaches. This would also make a fabulous pudding too. The batter can be prepared the night before and kept chilled until needed.

Ingredients

60g vegan margarine or coconut oil
4 peaches, stoned and thickly sliced
3 tbsp xylitol
115g plain flour
1 tsp vanilla extract
1 tsp ground cinnamon
4 eggs
175ml Vanilla Rice Dream
Additional peach slices to serve, optional

Method

  1. Preheat the oven to 220°C, gas mark 7.
  2. Melt the margarine or coconut oil in a frying pan (that can be placed in the oven) and add the peaches. Sprinkle over the xylitol and cook over a low heat until the xylitol has dissolved, about 2-3 minutes.
  3. Place the flour, vanilla, cinnamon, eggs and Rice Dream in a blender and process to form a batter. Pour the batter over the peaches. Place the pan in the oven and bake for 15 minutes until it is golden and puffed up.
  4. Serve immediately with additional peaches if wished.
