Pan fried prawns with chilli and tomato sauce

A quick and easy after work dish making use of store cupboard spices to create a delicious spicy sauce. Serve with a mixed salad for a healthy protein packed meal.

Ingredients

250ml Rice Dream
2 tbsp cornflour
1 tbsp tomato purée
Pinch of salt
Pinch of sugar
1 tsp garam masala
½ tsp ground cumin
¼ tsp chilli powder or to taste
1 green chilli, deseeded and finely chopped
1 tbsp lemon juice
1 tbsp coconut oil
1 tsp black mustard seeds
2 garlic cloves, crushed
450g/14oz uncooked, peeled, deveined prawns
3 tbsp finely-chopped fresh coriander leaves

Method

  1. Mix the cornflour with a little Rice Dream in a jug to form a paste.
  2. Add the remaining Rice Dream.
  3. Beat in the tomato puree, salt, sugar, garam masala, cumin, chilli powder, green chilli and lemon juice.
  4. Heat the coconut oil in a wok or frying pan.
  5. Add the mustard seeds.
  6. As they start to pop add the garlic and prawns.
  7. Stir fry until the prawns start to turn pink, about 2-3 minutes.
  8. Pour in the sauce and simmer for 5 minutes until it begins to thicken and the prawns are cooked through
  9. Garnish with coriander to serve.
  10. Accompany with a mixed salad, bread or rice
