Chocolate and pecan pancakes

For an indulgent weekend breakfast or brunch try this delicious chocolate nutty pancakes. Drizzle over a little honey or maple syrup and accompany with some blueberries for a wonderful family treat.

Ingredients

175g self-raising flour
3 tbsp cocoa powder
2 tbsp olive oil
3 tbsp xylitol
200ml oat dream
2 eggs beaten
75g Chopped pecan nuts
Maple syrup or honey to serve Mixed berries to serve

Method

  1. Sift together the flour and cocoa powder.
  2. Whisk in the oil, milk, eggs and sugar to form a smooth batter.
  3. Stir in the nuts Heat a frying pan with oil.
  4. Spoon the batter into the pan 4-5 pancakes at a time.
  5. Cook over a gentle heat for a few minutes then turn them over.
  6. Continue to cook for 1-2 minutes.
  7. Serve with honey or maple syrup and mixed berries.
