Chocolate and banana custard

This may sound like a guilty pleasure, but the inclusion of bananas puts it firmly in the good-for-you bracket!
Ingredients
2 tbsp groundnut oil
2 tbsp wheat flour
350ml Organic, Calcium or Vanilla Rice Dream
1 vanilla pod
50g 70% chocolate
4 bananas, peeled and thickly sliced
Method
- Place the oil and flour in a pan, mix to form a paste and place over a low heat and sizzle gently for about a minute.
- Whisk in the milk making sure you go around the edges of the pan with a wooden spoon to catch any hidden flour.
- Using a sharp knife, slice down the length of the vanilla pod and using the blade of the knife scrape out the seeds.
- Add to the sauce along with the scraped pod.
- Bring the sauce up to the boil and bubble gently for a minute or so.
- Turn off the heat then add the chocolate.
- Whisk in well to form a dark, glossy custard. Serve with the bananas.
- If you have any custard left over, use it as a dip for fresh fruits like strawberries, pineapple or oranges. Or even use it to top an extra special trifle!
