Chestnut veloute

A creamy autumn soup full of flavour and easy to assemble. Perfect as a festive treat too. Garnish with a little crispy bacon or top with some chopped chestnuts for a vegetarian option.

Ingredients

1 tbsp olive oil
1 onion, chopped
2 garlic clove, crushed
200ml white wine
200ml chicken stock or vegetable stock
300ml Rice Dream
300g cooked canned chestnuts
Salt and freshly ground pepper
2tbsp chopped chestnuts or crispy bacon to garnish

Method

  1. Heat the oil in a large pan and sauté the onion and garlic for about 10 minutes or until soft and translucent but not brown.
  2. Add the wine, stock, rice dream and chestnuts.
  3. Bring the soup to a simmer and cook for a further 10 minutes.
  4. Puree the soup in a blender until smooth and creamy.
  5. Place back into the pan and warm through.
  6. Garnish with chopped chestnuts or crispy bacon.
