Blueberry and pistachio clafoutis

This delicious classic French dessert makes a wonderfully sweet treat. In this version fresh blueberries are covered in a dairy free batter and studded with chopped pistachios. This is also delicious with other fruit such as pitted cherries, raspberries or summer nectarines and peaches.

Ingredients

450g/1lb blueberries

Batter :
20g/¾oz dairy free spread plus extra for greasing
4 free-range eggs
6 tbsp xylitol
1 tsp vanilla extract
75g/3oz plain or gluten free flour
200ml/7floz Rice Dream Vanilla flavoured milk
50g/1¾oz pistachio nuts, chopped

Method

  1. Preheat the oven to 190°C, Gas 5.
  2. Grease a baking dish with dairy free spread.
  3. For the batter, melt the vegan spread in a small pan. Set aside.
  4. In a bowl or food processor whisk together the eggs, xylitol and vanilla until creamy.
  5. Add the flour, whisk and slowly incorporate the Rice Dream and melted spread.
  6. Place half of the blueberries in the bottom of the baking dish and pour over the batter.
  7. Scatter the remaining blueberries and pistachio nuts over the top.
  8. Transfer to the oven and bake for 20-30 minutes, or until the pudding just wobbles when shaken lightly.
  9. Serve hot.
