Almond waffles with berry compote

A delicious gluten and dairy free waffle perfect as a breakfast treat or dessert. Accompany with a warm berry compote and toasted flaked almonds this makes a sensational protein packed healthy dish. If you don’t have a waffle maker use the batter for pancakes or blinis instead.

Ingredients

2 eggs
225ml/7 1/2floz Almond flavoured Rice Dream.
60g/2oz xylitol
2 tbsp olive oil
150g/6oz buckwheat flour or gluten-free flour mix
50g/1 3/4oz rice flour
2 tsp ground flaxseed
1 tsp baking powder
300g/10 1/2oz frozen mixed berries 1 tbsp xylitol, optional

Method

  1. Place the eggs, rice dream, xylitol and oil in a blender or food processor and process until combined.
  2. Add the flour, flaxseed and baking powder and beat to form a thick batter.
  3. Ladle the batter into a waffle iron and cook according to the manufacturer’s instructions.
  4. Meanwhile place the berries and xylitol if using in a pan and warm through for 5 minutes until soft.
  5. Serve the waffles with the berries.
