Almond berry ice

This superberry ice cream is rich and creamy and packed with antioxidants and vitamin C. Dairy free, the addition of Almond flavoured Rice Dream and almonds adds a lovely sweet nutty flavour. Vary the berries according to what's in season but cherries, raspberries and strawberries are all delicious. You can also make us of bags of frozen berries too.

Ingredients

125g/4½ oz blanched almonds, soaked for 1 hour then drained
75g/1/2 cup coconut butter/oil
30g/1oz xylitol or caster sugar
500ml Rice Dream Almond flavoured milk alternative
225g/7oz pitted fresh or frozen cherries
225g/7oz fresh or frozen raspberries
Additional fresh berries to serve

Method

  1. Drain the almonds.
  2. In a strong blender or food processor, blend the almonds, coconut butter, xylitol and Rice Dream until smooth and creamy.
  3. Add in the fruit and process again until completely smooth.
  4. Transfer the mixture to a shallow, freezer-proof container and freeze for 4 hours or longer.
  5. Alternatively spoon into little ramekins for individual portions.
  6. Remove 20 minutes before using to allow the ice cream to soften slightly.
  7. Top with fresh berries to serve.
